Maple Chipotle Baby Back Ribs
ingredients
- 4 racks of baby back ribs
- 3 cans of Guinness beer
- 1 1/2 gallons of water (more if needed)
- 3 Tbsp. Stonewall Kitchen Spice Rub for Steak & Barbecue
- 1 bottle Stonewall Kitchen Maple Chipotle Grille Sauce
directions
- In a large stock pot bring beer, water and spice rub to a boil and stir.
- Cut each rack of ribs in half and place in boiling liquid. Be certain all ribs are submerged (add more water if necessary).
- Boil for 1 1/2 hours partially covered.
- Remove ribs onto a cookie sheet and generously coat with Maple Chipotle Grille Sauce. (You can prep to this point hours in advance).
- Finish ribs off on a medium hot grill.
- Ribs can also be finished in the oven at 350 degrees F for 20-30 minutes.

Roasted Vegetables Chipotle Sauce
People will never guess your secret ingredient to this wonderful dish.
ingredients
- 2 large zucchini
- 2 large sweet onions
- 2 sweet red peppers or 1 can roasted red peppers
- 5 of 6 Portobello mushrooms, whole or sliced
- Stonewall Kitchen Maple Chipotle Grille Sauce
- olive or vegetable oil
directions
- Preheat oven to 375 degrees.
- Rub peppers with oil, place in baking dish and bake until soft and skin peels off easily. When cool, remove skin, stem and seeds, and set aside.
- Slice zucchini and onion into 1/4" to 1/2" thick rounds. Brush bottom rounds with oil, place on baking sheet and brush tops with Maple Chipotle Grille Sauce.
- Bake 15 minutes, turn slices over, and brush with sauce. Bake for an additional 15 minutes or until center on onion is soft.
- Do same with mushrooms, either whole or sliced.
- Lightly grease 9"x9" casserole dish. Layer onions and zucchini until gone, top with mushrooms and slices of roasted pepper.
- Mix 3/4 cup Maple Chipotle Grille Sauce with 1/4 cup olive oil and pour mixture over top. Marinate for several hours or overnight.
- Serve at room temperature or bake until heated through. Serve hot.

Southwestern Pizza
Southwestern flavors and ingredients impart New World style to this Italian favorite. Be creative & add your own favorite toppings.

- 1(12-inch) purchased pizza crust, such as Boboli
- 3/4 cup Stonewall Kitchen Maple Chipotle Grille Sauce
- 5 ounces of jalapeno or plain Monterey jack cheese, finely shredded
- 2 southwestern-flavored (or other) cooked chicken sausages, sliced
- 1 roasted red bell pepper, cut into thin strips
- 1 small onion, split and thinly sliced
- 2 tablespoons minced pickled jalapenos, optional
directions
- Preheat oven to 450 degrees F.
- Put pizza crust on a cookie sheet.
- Spread Maple Chipotle Grille Sauce over crust. Drizzle on 4 ounces of cheese.
- Add sausage, bell pepper and onion slices and jalapenos, if using. Drizzle on remaining cheese and bake in the lower part of oven until cheese is melted and bubbling and crust is crisp 11 to 14 minutes. Remove, cut into slices and serve.
